You can also use the channel mixer in the 4th button in the layers palette (the b/w cicle down there) and set rgb to 43, 33 en 24 (as default) en click the button to monochrome... Adjust the sliders to what you want (green will do the most because it contains most of your picture info).
The great advantage is you can always ajust these settings if you want!

Just a note -- Photoshop CS3 has a new Black and White conversion tool.
Much more effective.

One thing that allot of people don't know is that you can convert an RGB or CMYK image to greyscale, using only the selected channel. I do this regularly at work (I'm a newspaper image enhancer), and proceed by first hitting Cntrl-1,2 & 3 and checking out each individual channel in the raw RGB. In none of these channels has the detail I'm looking for I convert to CMYK, then check each channel for a suitable grey.
Once I've fished around and found one or two channels that I like I duplicate them into new images, convert to grey (using only the selected channel), then select the image closest to the result I'm looking for, and successively apply at appropriate opacities Image->Apply Image using multiply (to darken) or screen (to lighten) to add information to the image. Doint the same with a a L.a.b. lighness channel with soft light can also help to add a bit of life to the image.
I finally get my dodge and burn tools out to add detail to things that look a little washed out and do a Unsharp Mask.
